4 pounds
ground beef, low fat is best
1 T salt
1 tsp. fresh ground black pepper
1 tsp. lemon pepper
1 T fresh onion, minced
1 tsp. Coleman’s Dry Mustard
4 T Worcestershire sauce
1 T Pickapeppa Sauce
1 T Cavender’s All-Purpose Greek Seasoning
1 T garlic powder
1 T dill weed
1T paprika
1 T ketchup
2 whole eggs
Combine the following;
¼ pound finely
grated cheddar cheese
¼ pound finely grated Swiss cheese
¼ pound finely crumbled blue cheese
¼ pound finely grated Gruyere cheese
(Add other cheeses if desired; or use other cheese in place of above)
Toasted French Rolls, lightly buttered
Thick slices of cheddar cheese
Serve with the following condiments
Ambrosia
Sauce (recipe follows)
Mayonnaise
Mustard
Lettuce
Tomatoes
Dill pickles (I use the kind Deli’s sell in barrels; much better flavor)
In a very large mixing bowl, combine the first 14 listed ingredients, until well mixed. Adjust any seasoning you prefer. Make 8 hamburger patties in a log shape so it fits French roll. As you mold patties, add mixed cheeses in center of patty and form hamburger around cheeses. Make sure patty is well molded so cheeses don’t leak out while cooking. The burgers must be cooked on a hot open brazier, either over medium hot coals or open gas flame. Turn only once, immediately when you see blood rise on the top. When you see clear juice rise on the cooked side, you’ve got a perfect medium rare. Do not over cook! Wait as long as possible to add cheddar slices, as this slows down cooking time. Serve immediately with French rolls that have been lightly buttered and then toasted.
1 whole egg
1 extra egg yolk
¼ tsp. salt
1 ½ tsp. Dijon mustard
1 ¼ c. olive oil (use good quality)
4 tsp. fresh lemon juice
1 T boiling water
¾ c. tomato sauce
2 T fresh chili salsa
In food processor, mix egg, extra yolk, salt, mustard, and ¼ c. of the olive oil. On high speed slowly drizzle in remaining oil. When well blended, add the lemon juice and boiling water. Pour into a bowl and whisk in the tomato sauce and salsa. Cover and chill well before serving. Yields 2 ½ cups.

Makes six hamburgers.
1 1/2 lb Ground Beef 1/4 cup Onion; Finely Chopped,
1/4 cup Water Or Evaporated Milk 1 teaspoon Salt
1 teaspoon Worcestershire Sauce 1/4 teaspoon Pepper
VARIATIONS
1 tablespoon Horseradish 1 tablespoon Mustard; Prepared
1 tablespoon Chives - Snipped
2 tablespoon Blue Cheese - Crumbled (Use only enough Blue Cheese to suit your own taste!)
2 tablespoon Sesame Seed 1/4 cup Ripe Olives; Chopped
1/4 cup Dill Pickle; Chopped, OR 1/4 cup Pickle Relish
1/4 cup Nuts; Chopped
Mix all ingredients (including those in the variations that you choose) together. Shape mixture into 6 patties, each about 3/4-inch thick. Broil or grill patties 4-inches from the heat, turning once, to desired doneness, 10 to 15 minutes. Nice served on toasted buns with favorite toppings.
You don't have to go to a pizza place to have wonderful pizza. You do have to plan ahead several hours. Then you too can say that it will be ready in 25 minutes. (When you call to order a pizza, the pizza will ALWAYS be ready in 25 minutes!)The recipe is adapted from the Joy of Cooking.
Mix:
4 cups white all purpose flour
1 tablespoon or package of yeast
2 tablespoons of olive or vegetable oil
1 teaspoon of salt
Knead for about 10 minutes. Cover with a damp cloth and let it rise between 1 and 2 hours.
Prepare oiled cookie sheet or pizza pans by sprinkling corn meal over them. Pat, roll, and
stretch out the dough in the pans. Lightly brush the dough with olive oil. Let the dough
rest 10 minutes. Spread pizza sauce on top of the dough. Place your favorite toppings on
(Portobello mushrooms, fresh peppers, and onions for me!). Cover with lots of mozzarella
cheese. Bake in a 400 degree preheated oven for 25 minutes.
